I suffered in the cold through a 3-hour wait (5am to 8am). I’m not planning on doing this again, as the sushi wasn’t worth that length of line-standing.
Definitely more tourists than locals. Probably because there are online / English resources available that talk about it and over-hyped it up. This explains the long line.
The chefs placed the sushi directly onto a countertop that they wipe clean after each piece and before each customer sits down.
The sushi was normal, but not special. This makes me think that the fish & sushi available in SF is similar in quality as Tsukiji…
The miso soup was memorable with its rich meaty flavor, likely due to its bits of fish meat & bones. Never had a miso soup this good! Awesome.
The tea was served too hot. Fortunately the cup let all the heat out, so I knew to wait to avoid burning my tongue.
